Quarter the body making two topsides and two downsides.
Katsuo in this season is more fatty than blue fin.
Take off the dark colored part at the center along with its small bones.
This is the blood making part not fit for sashimi but to be stewedwith soy and fresh ginger.
Skin the top sides, bottomsides if you like it.
